Our menus

A Meeting of French and Japanese Gastronomy — or a Fully Japanese Culinary Immersion

Each menu is a journey guided by the seasons, the finest ingredients of the day, and the Chef's inspiration.

Surprise is part of the experience. Every tasting is thoughtfully adapted to accommodate your allergies and dietary restrictions.

Our mission: to awaken your curiosity and introduce you to unexpected flavors—revealed through ingredients you might not have chosen yourself from a traditional menu.

Open Tuesday and Wednesday evenings, Thursday, Friday, and Saturday for lunch and dinner, and Sunday lunch.

GASTRONOMY IN THE HEART OF VIENNE

The Chef offers five fully homemade gastronomic menus, blending precision, emotion, and creativity.

🍴 The menu changes regularly and may be adjusted according to the freshness and availability of our ingredients.

AT THE CHEF'S DISCRETION

Each experience is served at the Chef's discretion:

a sequence of creations — not "dishes" in the traditional sense — designed as a coherent journey, where every step matters.

The menus are surprise menus and are never revealed in advance.

A5 WAGYU MENUS

The A5 Wagyu menus are available by reservation only, for a minimum of two guests.

They are served in the evenings from Tuesday to Saturday, as well as for Sunday lunch.

Due to the rarity and importation of our products, we will contact you personally if certain ingredients are not available on your chosen date.

In that case, we will offer to reschedule your reservation in order to guarantee the quality of the experience.

BEFORE YOUR VISIT

Please inform us in advance of any allergies, intolerances, or important dietary preferences.

As our cuisine is entirely guided by the Chef's inspiration, some last-minute adjustments may not be possible.

To ensure the best possible experience, one single gastronomic menu must be chosen for the entire table.

DRESS CODE & ATMOSPHERE

Dat Milton is a place of gastronomy and elegance, where every detail matters — on the plate as much as in the atmosphere.

We kindly invite you to wear elegant, polished attire in keeping with the spirit of the House.

Overly casual clothing — such as shorts, flip-flops, tank tops, sportswear, and similar items — is not accepted.

Elegant and comfortable attire is always welcome, whether for a refined dinner, a weekend lunch, or a special occasion.

Our wish is for every guest to feel both comfortable and fully at home in an experience where the cuisine, the service, and the atmosphere come together in harmony.

CHILDREN AT DAT MILTON

We do not offer a traditional "children's menu."

We believe it is never too early to introduce young palates to the richness of flavors.

Our menus can be adapted in portion size, seasoning, or presentation, so that each child can fully enjoy a true gastronomic experience at their own pace.

Please mention the presence of young guests when making your reservation.

A MOMENT TO SAVOR

At Dat Milton, we take the time to do things properly.

Our cuisine is prepared to order, using fresh ingredients and artisanal craftsmanship.

Each creation is cooked on site, à la minute: nothing is precooked, nothing is rushed.

Here, we slow down, savor, and enjoy the moment.

Thank you for your patience. We hope you enjoy this gourmet interlude, far from the rush of everyday life.
